What is the value of competition?
- Pauline:
I have done a lot of competitions nationally. I just competed in the American Culinary Classic which was in Chicago two weeks ago. I look at competition for myself as a way of looking outside of the square and doing something different, that I wouldn’t normally do. The hardest thing, when you are in the industry, is that you have a job. Whatever time you start to whatever time you finish, you are busy doing that job, so it’s very hard to do something outside of that.
I like to see where I am nationally and even in the world, but predominantly you are always competing against yourself. You start with 100, and then you lose marks for problems, or things that they don’t think you deserve the full marks for. But it’s a fantastic way of getting better at what you do. Adam was in a competition for himself, against himself, seeing that he could get this Michelin Star. It’s a similar kind of thing.
