For me, obviously, you need the money to do it, but that’s not the hard part.
It’s really feeling comfortable in the fact that you can do this. It’s not just about cooking anymore. You are suddenly the plumber, the janitor. When anything goes wrong, it’s your problem. That was a big learning curve for me down on Taranaki Street. All of a sudden you weren’t just the guy making all the food. You’re the one paying the wages, making sure everything is maintained, and painted. It’s crockery and cutlery, the whole nine yards.
It is a big job. Surround yourself with good people. That would be my recommendation. If you get good people around you, you can basically do anything.
